Blackberries, goat cheese & thyme? Could their be a better combination for a dessert that you could call 'dinner'? I think not.
When I first saw this recipe on Pinterest, it was made in individual little tartlets. Well the last time I made tartlets they burnt to a crisp within minutes. Saying my oven runs hot is an understatement. So I knew I wanted to make the tartlets but in a bigger much less time consuming pan.
The recipe is easy and straight forward. The ingredients are what shine here, not an fancy techniques or presentation.
The end result, (with cream cheese in the crust! a first for me)was just as good as I hoped it would be. The thyme is such a nice and unexpected compliment to the blackberries, which still have that tart kick. And of course the goat cheese, if you read this blog a lot you know I forever go on about my love of goat cheese. Go for a high quality one, its worth the few extra bucks. If you live in San Francisco, run by Rainbow Co-op grocery and get some Harley Farm goat cheese. The only place I've ever been able to find that cheese besides the actual farm in Pescadero.
Oh dear, typing just those few words has taken me forever. Since I am limited to one handed typing right now. So if there are a lot of grammar or spelling errors, give me a pass ok? I stabbed my middle finger with a knife last night. Sliced right in deep. It's all purply and hurts like a f**king b**ch if I touch it.
So just a quick update on my life.
Besides the busted finger, on Tuesday/Wednesday my glands or whatever swelled up huge, so my face looked really weird and hurt horribly. So I had to go to the doctor and his reaction was 'Weird! I have never seen that before!' Great...
People in my family keep getting sick, like the bad kind of sick. One funeral to attend next weekend. I hope there aren't any more for a long while...
and finally..... I signed up for motorcycle lessons! Oh yes this girl is going to ride a motorcycle. Not just a passenger anymore. Whenever I used to ask a certain guy from the past to teach me how to ride he would always say yeah sure but never actually do it. So after many failed attempts to try and plan a lesson, he finally came out with the 'your a girl and your just going to drop and f-up my bike'. So a big screwwwww youuuuu. This girl is doing it on her own. Only if he would give me my darn helmet back.....
